Five on Friday

Hey y'all! Happy Friday! 
Let's get down to business! 

1) Wednesday night we had beers and pimento cheese on the Rooftop


Pimento cheese not pictured because we were too busy stuffing our faces, it is that good!

2) Parmesean crusted fries with ricotta-hummus dipping sauce 
Last night we were having an all vegetable dinner, so I decided to make us a little app before we ate. These fries turned out great and the dipping sauce had just enough spice to it! It took less than five minutes to prepare and was ready in 20 minutes! Since we are watching our calories, I counted out three servings of fries, which comes to 390 calories. I am guessing in between the cheese and sauce, this comes to around 500 calories total, which if you are splitting with your spouse its 250 calories per person!

(3) Servings of Ore-Ida Simply Olive oil and sea salt fries
Salt, pepper, paprika and parsley to taste
(2) BIG spoonfuls of part-skim ricotta cheese
(1) BIG spoonful of supremely spicy hummus 
Few dashes of hot sauce
(1) Squirt of dijon mustard
Parmesean cheese

Preheat oven to 425 
Line baking sheet with foil and spray lightly with cooking spray
Season fries and cook naked for ten minutes
Take fries out of oven, sprinkle with parm cheese and bake for an additional 10 minutes
Mix ricotta, hummus, hot sauce and mustard together in bowl, add a little evoo if mixture seems too thick.
Allow fries to cool for a few minutes before arranging on plate!
Voila! Enjoy!

3) This little girl 
I don't know what we did before we made her ours! She has puuurrreed her way into our hearts!

4) The envelope system 
I cannot save money y'all. If its in my bank account, I spent it. If its in an adjoining bank account, I transfer it. Save and budget are just not words in my vocabulary. BUT I am good at putting money away. I don't know what it is, but the envelope thing works for me. Maybe, it is seeing the money put back for each individual thing? Who knows, but I have four big things I need to be saving for! I am hosting my friend Jessica's Bachelorette party in May! Steven's 30th Birthday in June! His wedding band and our honeymoon! And speaking of honeymoon....we've narrowed it down to two locations: Key West or Costa Rica!

5) This Dress
I ordered this dress two weeks ago from Sheinside after Megan from Fried Green Pickles posted about it! It was supposed to ship out on the 15th....today I was told that it was supposed to ship out in the next 3-4 days. All I have to say is that it had better be here soon because I have every intention of wearing it for our next round of engagement photos! I have no patience....

  2. I ordered a blanket scarf from Sheinside on Dec. 2... I got it Dec. 28. They take SNAIL MAIL to the extreme!! Hope it comes soon! Super cute! :)

  3. We went to Guanacaste and La Fortuna Costa Rica last summer. I liked the volcano area/mountains more than the beaches, but loved the country so much!

  4. I was thinking of doing an envelope system for spending. Keyword there thinking. I never have done it yet. Although I have read some of the ABC's of financial freedom and I've looked up a lot on Dave Ramsey's snowball methods, but i just haven't taken the leap yet. lol .
